Pascal's

This Château wine on its own represents everything that
is great about the Commanderie de Peyrassol. Created
more than twenty years ago, it comes from vines which are
at least 45 years old, and a great deal of care goes into
its production. It is a cru which appears on the wine lists
of the most prestigious establishments both in France and
abroad. A clay and limestone terroir, with limestone predominating and a level of stoniness which exceeds 40%.

Varieties:
Rolle – Ugni Blanc

Growing:
Selected plots of the oldest vines.
Low-yield sustainable production: 30 hectolitres per hectare.
Separate manual harvesting of each variety in 30 kg baskets.
Vinification:
Selective sorting of the harvest. De-stemming, skin-contact maceration. Pressing and decanting into new casks Fermentation in casks at a
controlled temperature (18° C).
Ageing:
12 months in casks with stirring over fine lees once a week

Tasting:
Pale yellow in colour.
The nose is complex and evocative of exotic fruits (grapefruit, citrus
zest) and white fruits (pear, peach) and combines with a complex palate
of well-ripened Mediterranean fruits, complemented by a hint of vanilla
which adds a further touch of complexity.
In the mouth, the balance is built around a distinct fruitiness, sustained
by a fine tension.
The mid-palate is both meaty and crisp, giving it a beautiful length.
Pairing:
Coquilles Saint Jacques with truffle, veal chop with morels, fresh goat’s
cheese with olive oil
