OLIVES  VARIETIES:  Salonenque,  Béruguette  (Aglandau), Grossane  and  Verdale    are the 4
main varieties.

PRODUCTION  :  This olive oil    is produced  from fresh olives, without  storage or very short
storage.  The  manufacturing  process  is  continuous:  crushing  olives,  mixing  paste,
centrifugation for oil extraction, oil storage

ASTING  :  Thus,  it  preserved  plants  aromas  and  has  a  slight  pepperiness  character,  and sometimes a little bitter, with dominant aromas of fresh almond, raw artichoke, green herbs, apple….
SERVING  SUGGESTIONS  :  For  cooking,  it  married  whith  all  dishes  hot  or  cold,  grilled fishes, tomatoes salads, all steamed vegetables, pasta, rice….
